Museumand recipe contribution: Ginger Beer


To make 3 litres of ginger beer you will need

  • 125 grams fresh grated ginger
  • 1 lemon
  • 6 whole cloves
  • 2.5cms cinnamon stick
  • Brown sugar/honey to taste


  • Scrub ginger before grating
  • Use the smallest side of a box grater to grate until left with only the husk.
  • The ginger husk can be frozen for making lemon and ginger tea
  • Put the grated ginger into a container that will hold at least 1 pint of liquid
  • Add cloves and cinnamon
  • Wash and squeeze the lemon
  • Add the lemon juice
  • Pour a litre of cold water on to all the ingredients
  • Leave to set overnight.
  • Strain contents of the container
  • Add 2 litres of cold water to the strained liquid
  • Sweeten to taste with brown sugar/honey

It’s a mixed club with members from different Caribbean islands and African countries. Enid loves the conversations at meal times about the different techniques for making a dessert or a dish that may have the same name in every Caribbean island but for which some islands use slightly different ingredients and serve with different accompaniments. She loves that a meal shared gives diners a chance to talk about island histories and reminisce about culinary traditions.
